- Add up the ingredient cost for one serving
- Convert your VAT-inclusive menu price to net price
- Divide cost by net price and compare to your target
VAT Example
If your menu shows £14.40, the net price is:
£14.40 ÷ 1.20 = £12.00
Now calculate food cost % using £12.00, not £14.40.

- Menu price shown to guests: £14.40
- Net menu price: £12.00
